Baklava Cake

Incredibly moist syrup-soaked sponge gently spiced with cinnamon layered with a blend of pecans and pistachios.








Completely vegan and so easy to make!


Baklava Inspired Sheet Cake



We are going to start by making a simple sugar syrup. In a saucepan, add sugar and water. Place onto a medium-high heat until the sugar has dissolved. Then add syrup and cloves. Bring to a boil and then leave it to simmer for 20 minutes.

I made this today and it was spectacular. Cake rose nice and high; texture was fluffy and moist. I made a few substitutions based on what I had on hand as well as personal preference— coconut yogurt instead of soya, oat milk in place of soy, walnuts instead of pecans, and I added a splash of orange blossom water and rose water to the syrup after it simmered. Also, I wasn’t sure if the tablespoon of cloves in the syrup was supposed to be whole or ground (I used whole). Overall, this cake was perfection. Thank you so very much!
