We start by making my one bowl coconut sponge with desiccated coconut and coconut milk for that sweet creamy flavour. The passionfruit curd is sweet, tangy and creamy made with just 4 ingredients and is used to fill each cupcake. Sealed with creamy coconut buttercream, these cupcakes are perfectly light, fluffy and moist, bursting with tropical summer flavour.
