Tahini and Pistachio Sticky Toffee Pudding

Served warm, this sticky toffee pudding is gooey and comforting with rich nutty sweet flavour and earthy notes in every single bite.

Sponge Key Ingredients

1. Flour: The trick to a soft, well risen puddings is self raising flour, in combination with levelling agents (trust me!)

2. Light and Dark Brown Sugar: Packed with molasses offering depth of flavours, more robust richness and moisture to your pudding.

3. Dates: for that honeyed sweetness, stickiness and a chewy bite to the sponge.

4. Yoghurt - this acts as our egg replacer, helping to bind the ingredients together and create that ulta moist texture.

5. Pistachios - folded through the mixture they add nutty flavour notes and a little bit of crunch

6. Tahini - made from ground sesame seeds, its slightly earthy bitter flavour pairs so well with the sweetness from the dates, sugar and toffee for the perfect flavour balance.

Sauce Key Ingredients

1. Butter: My favourite plant based butter is Flora. I would always recommend using a block style butter to ensure it doesn't split.

2. Light and Dark Brown Sugar: The same as the sponge, I use a combination however you can use just light brown sugar or dark brown sugar.

3. Cream: My favourite cream to use is dairy free double cream - the Elmlea brand works perfectly! However you could also use heavy cream.

4. Honey:  The combination of honey and tahini gives that sweet-savoury flavour
