Eggless Apple Fritter Cake

Tender cinnamon cake with a gooey apple cinnamon filling. Baked with a sweet cinnamon brown sugar topping and finished with a crispy vanilla glaze, this cake has everything you know and love about the classic doughnut but in cake form. 




Eggless Apple Fritter Cake


We start by making the gooey apple filling by gently cooking apples in a cinnamon sugar mixture for that soft texture and beautiful sweet caramel flavour. For the cinnamon sponge we start with dairy free buttermilk and yoghurt, and use brown sugar for that warm sweet flavour. The apple filling is layered in the centre before being baked until golden. Poked with holes the cake is covered in a sweet vanilla icing with hardens whilst cooling for that crispy top. 





Tips for making the best sponge:


1. Use buttermilk - due to the acidity, buttermilk helps break down gluten and proteins in cakes to make them more tender. I make a dairy free alternative by adding vinegar to dairy free milk.

2. Don’t overmix - this will cause dense, tough, or deflated cakes

3. Use room temperature ingredients - room tempetature ingredients bond together better, creating a seamless and even texture

4. Weigh your ingredients and follow the exact recipe

5. Don’t overbake or rush!
