Eggless Triple Chocolate Guinness Cake
Three layers of super moist chocolate sponge made with Guinness for deep chocolatey flavour. Layered and wrapped in a delicious chocolate Guinness cream cheese frosting and finished with a chocolate drip topping, this is the perfect cake to celebrate St Patrick's Day! The recipe doesn’t require eggs and can be made without dairy plus it’s super simple to make.
Eggless Triple Chocolate Guinness Cake
The sponge comes together in just one bowl and starts with yoghurt and buttermilk for that incredibly tender crumb. With dark, creamy coffee and caramel undertones, Guinness is added into the mixture to intensify the chocolate flavour. The chocolate cream cheese frosting is sweet and velvety which complements the dark, fudgy chocolate cake perfectly.
Egg-free, dairy-free and so easy to make!
Step by Step Instructions
Start by preheating a fan oven to 170 C then line and lightly grease three 6 inch pans. Mix together milk and vinegar - set aside to thicken to create a dairy free buttermilk. This should take around 10 minutes and will be a similar consistency to single cream. If you are using dairy substitute this for dairy buttermilk.
Once thickened pour into a large mixing bowl and then add in the remaining wet ingredients.
Using a sieve, sift in the dry ingredients. Gently mix until JUST combined - there may be some small lumps but that is fine! Overmixing may cause the cake to be dense and not rise.
Pour the batter into the tins and then bake for around 30 mins - the sponge should also spring back when touched in the centre.
Make the chocolate drip topping by heating the cream to boiling. Drop the chocolate into the cream and let it melt. Gently mix to form a thick ganache. Pop into the fridge whilst you make the buttercream.
With a hand mixer or paddle attachment on your stand mixer, cream the butter on medium-high until it’s creamy and light in colour. With the mixer on low, add the powdered sugar bit by bit, scraping down the sides of the bowl after each addition. Add in the cream cheese (make sure all excess water is removed) and beat until thick and creamy. Slowly add in the cocoa powder and Guinness and mix until combined.
Layer the cakes with the frosting and finish with the chocolate ganache topping.
