The moist lime sponge comes together in just one bowl starting with yoghurt and buttermilk which not only adds moisture but also binds the ingredients together as we are not using any eggs in this cake. The mousse is made with just 4 ingredients which are gently whipped together for that light and creamy texture. Once chilled the cake is covered in biscuits crumbs so that each bite has just that little bit of crunch which pairs so well with the melt in your mouth texture of the filling.
