Key Ingredients
Ground pistachios and pistachio butter: Ground pistachios are used in the sponge for a moist and rich texture that is so soft and fluffy. Pistachio butter is mixed with maple syrup and coconut oil to create a thick gooey caramel which gives that oozing pistachio centre.
Sugar: A combination of caster sugar and light brown sugar give a sweet flavour full of buttery toffee notes.
Buttermilk: Creates a soft, melt in the mouth crumb
Coffee: Instant coffee or a shot of espresso is added into the buttercream which gives that subtle latte flavour in every single bite.
Storing tips
The sponge can be made a day or two in advance. Once the sponge is cooked wrap it whilst still warm in cling film and store at room temperature. Once ready to serve, make the buttercream and pistachio caramel.
