Tips
Gently mix your batter -if you over mix the batter or bake the cake too long, it could become dense, gummy, or dry and more likely to crack.
Use a tea towel - I have tested this recipe both by flipping the sponge onto a towel and also onto baking paper. The tea towel method works much better as it helps to absorb some of the moisture so keeps the cake more moist and creates less cracks
Make sure the cake is fully cooled before trying to frost it otherwise your frosting will melt.
