Toffee Apple Self Saucing Pudding 🤎

Made and served in just one dish, one easy mixture turns into a warm toffee sponge with gooey toffee sauce. Apples are layered at the bottom with the sauce seeping down to create sticky sweet toffee apple chunks. The pudding is so fudgy and moist, and the sauce is rich and indulgent for a perfectly cosy comforting dessert.

250 g self-raising flour
110g soft brown sugar (I used a mix of light and dark)
1/4 tsp ground ginger
2 tsp cinnamon
240 ml dairy free milk
1 tsp apple cider vinegar
120 ml oil
85 g molasses
3 small apples, peeled and diced

Sauce
420g boiling water
160g soft brown sugar
1 tbsp cornflour

Preheat oven to 180°C fan and lightly greased a 9 inch square baking dish.
Arrange the apples in the bottom of the dish.  In a large bowl combine the milk and vinegar then add in the remaining wet ingredients.
Gently mix in the dry ingredients then pour the mixture over the apples.
Mix together the sugar and cornflour then sprinkle over the top of the cake mixture.
Cover with boiling water - I like to pour this over the back of the spoon to stop the mixture breaking.
Bake for 35-40 minutes, then allow to cool for 10-15 minutes before serving with ice cream.

Apple Fritter Baked Oats 🤎 | ad

A combination of soft sweet oats layered with fresh buttery cinnamon apples covered in a sweet glaze.

Made with the @proteinworks instant oats and apple and cinnamon wondershake, It’s as simple as mixing the ingredients together, layering with fresh cinnamon apples and baking until golden.

#recipe

2 medium apples
1 tbsp dairy free butter
1 tbsp cinnamon

150g apple sauce
200g dairy free yoghurt
480ml dairy free milk
1 tbsp apple cider vinegar
150g rolled oats
150g @proteinworks instant oats
60g @proteinworks Apple and Cinnamon Vegan Wondershake
1 tbsp coarse sugar e.g. Demerara sugar

Glaze
30g @proteinworks Apple and Cinnamon Vegan Wondershake
2 tbsp icing sugar
200ml dairy free milk

Start by cutting the apple into small chunks.
In a saucepan, melt the butter over medium heat and then add in the apple. Sprinkle over the cinnamon and gently stir the apples until they are just soft.
Next combine the milk and vinegar. Set aside for 10 minutes to thicken.
In a 9 inch square baking dish combine the dry ingredients. Add in the yoghurt, apple sauce and milk mixture. Mix until combined.
Top with apples and gently fold through. Sprinkle over a tbsp of coarse sugar.
Bake at 170 degrees C for 30 - 40 minutes, or until well risen and cooked through.
Whilst the oats are baking, make the glaze. Add the protein and icing sugar to a small jug and add in the milk slowly until you have a pourable consistency (depending on the milk you are using you may need more or less, so just keep adding slowly until you have the desired consistency).
Poke holes in the cooked oats and pour the glaze over. Leave to cool completely.
Serve with a dusting of cinnamon.

Pumpkin Spice Latte Cheesecake 🍂🤎

Buttery chocolate biscuit base, creamy spiced pumpkin cheesecake filling layered with Camp Coffee soaked sponge fingers. Decorated for Halloween, @campcoffeeuk is the key ingredient adding a delicious blend of coffee and chicory for that creamy latte flavour throughout.

Recipe:

Base:
300 g chocolate biscuits e.g. oreos
115g dairy free butter, melted

Filling
200g pumpkin puree
1 tbsp pumpkin spice mix
2 tbsp @campcoffeeuk
270ml dairy free double cream, cold
500g dairy free cream cheese, full fat, room temp
80g icing sugar
1 tbsp cornflour

Sponge layer:
12-14 sponge fingers
2 tsp @campcoffeeuk
200ml warm water

Topping
Chocolate biscuit crumbs
Mini pumpkins
Sponge fingers

Lightly grease an 8 inch springform pan.
Crush the biscuits into a fine crumb (I used a food processor). Transfer to a bowl and pour the melted butter over the top. Mix until combined and you have a ‘wet sand’ consistency.
Press this into the tin until smooth. Pop into the fridge.
For the sponge finger layer, pour the Camp Coffee into a bowl and pour in the boiling water. Gently mix until combined. Set aside to cool whilst you make the cheesecake filling.
Using a stand mixer or hand whisk, whip the double cream until its thick and starts to form stiff peaks (do not over whip!).
Add in the cream cheese, cornflour, icing sugar, pumpkin, pumpkin spice mix and Camp Coffee - whip until smooth. Remove the tin from the fridge and spread half of the cheesecake filling evenly over the biscuit base.
Dunk sponge fingers into the brewed Camp Coffee and layer over the cheesecake. Cover with the remaining cheesecake mixture and then leave to set in the fridge overnight.
Once set cover with the crushed biscuits and mini pumpkins.
